Some time we feel bored to get into elaborate cooking for the afternoon and end up making something simple and quick. Today was one of it's kind and i prepared one pot dish called tomato rice which is popular in our cooking. It is easy and can be prepared less than 20 minutes in a cooker. It's eaten with raita, boiled eggs or salads. This dish is prepared for lunch or dinner which is filling.The recipe is given below for you to try and enjoy the one pot meal.
Ingredients:
Long grain Basmati rice - 1 cup (soaked in water for 5 to 10 minutes & drained)
Tomatoes -2 to 3 medium sized (pulped in a mixer)
Onion - 1 big in size ( lengthwise cut)
Slit green chillies - 3 to 4
Coriander leaves - few
Curry leaves - few
Mint leaves - few
Oil/ghee - 3 to 4 tablespoons
Ginger Garlic paste - 1 table spoon
Turmeric powder - 1/4 teaspoon
Bay leaf- 1
cloves - 2 to 3
Cardamom - 2
Cinnamon stick - 1 small piece
Cashew nuts - few
Water - 2 cups
Salt for taste.
How to prepare: In a pressure cooker add oil/ghee and the spices of Bay leaf, cloves, cardamom, cinnamon stick and cashews. Fry for few seconds and add the lengthwise cut onions and curry leaves. When it becomes transparent add the slit green chillies, tomato pulp, ginger garlic paste and turmeric powder. Lower the heat and turn the gravy till the ginger garlic smell goes away. Pour in 2 cups of water & add salt , coriander, mint leaves. When the water starts to boil add the soaked drained rice.Mix it well with a spoon and close the lid. Increase the heat. After 3 to 4 whistles switch off the stove. When the steam settles inside remove the lid and serve hot with raita , cut salads or boiled egg.
