High Tea Table setting with Mango Recipe:)))

At this time of the year in tropical regions, the topic on fruits, it is all about the seasonal fruit the Mangoes. Mangoes are most welcomed into the kitchen whether it is unripped or ripen. The recipes with Mangoes are endless and enjoyed most in whichever form they are prepared. 
During this unprecedented time, one would love to try new recipes
and serve and also helps one to add it to quarantine days cookbook diary. Learning new preparations, always widen the knowledge of cooking.
What's new in preparing with mangoes?
Here is a Mango + Chickpeas salad as a starter or can be served as part of other dishes. The spice mix recipe with Mangoes is enjoyed when it is served. Best taken with slices of bread, stuffed inside a pitta bread, rotis or even with any type of rice preparation. 
Here is a high tea table setting for lockdown comforts.

Ingredients 

Chickpeas- 400gm
Oil- 2 tablespoons
Curry leaves- Few
Mango-1 ripe
Tomatoes -3 medium (diced)
Coriander leaves- Handful. 
Juice of 1 lemon.  

For the spice mix
Dried mango powder- 2 tsp
Ground coriander powder-1/2 tsp
Cumin Powder- 1/4 tsp
Chilli powder- 1/4 tsp 
Cardamom powder- 1/4 tsp
Cinnamon powder-A pinch 
Asafoetida- A pinch
Salt- For taste

Yoghurt-  4 tablespoons for dressing

 Boil the chickpeas in enough water when it is done drain, rinse and pat dry. Heat a medium pan add the oil and when it is sizzling hot put the chickpeas and fry for 3 minutes until crispy. Next, add the curry leaves and fry for few more seconds. When the curry leaves changes colour, remove from pan and drain them on kitchen paper. Peel and cut the mango into small cubes. In a bowl or on a plate add the chickpeas, diced tomatoes, cut mango cubes & finely cut corriander leaves.
Add salt and sprinkle the spice mix. Mix it well with a spoon for few seconds. Add lemon juice stir well without breaking the mango cubes. If desired yoghurt could be added with a sprinkle of asafoetida on top.

Mother's Day Table With Touches Of Blue, Pink, Gold # soup recipe:)


Mother's day celebration couple of days away and creating a table for the occasion, indeed a good feeling. The table setting with a combination of Navy Blue, Pink with touches of Gold looks pretty as well.

Corn Kernel Soup

Serves 4

Ingredients
Oil- 30ml (1 fl oz)
Cardamom, Clove, Bay leaf - 1 each
Peppercorns - 5
Cumin seeds- 1/3 teaspoon 
Onions - 100gm (4 oz) sliced
Corn kernels- 500gm (1.2 lb)
Chopped ginger- 1/2 teaspoon
Chopped garlic- 1/2 teaspoon
Chopped tomato- 1 medium size
Coriander leaves- 4-5 springs
Chopped mint leaves 1/2 teaspoon
A pinch of red chili powder
A pinch of turmeric powder
Salt to taste 

Method
Heat oil, crackle whole spices & cumin seeds. Add sliced onions and saute till golden brown. Add corn kernels and saute till it becomes soft. Add chopped ginger and garlic and turn it for a while. Add chopped tomato, coriander leaves, red chili powder, and saute till it releases oil. Add 1.2 (2pt) water and salt and cook for 20-25 minutes. Puree the soup in a blender and serve hot, garnished with chopped mint.

Summer Tables with Natures Picks:))




'Surrendering to uncertainty leads to creativity' ...true to it's saying I managed to create these tablescapes for CG. 

Nothing in life compares to the joy of having a meal with your dearest friends, and when such occasions are curbed all of a sudden it certainly calls for a dull moment. 

Since going outside the house is restricted picked up a few nature's treasures from our terrace garden to create these table settings. It instantly gave me a sense of cheerfulness.

Summer is almost here and the seasons are truly gifts from nature to humans and the cycle of seasons gives us a sense of hope.  Currently, everyone worldwide hoping for the normalcy to return at the earliest. 

The Sun is shining bright and the birds are happily enjoying the Sunshine. Due to the restrictions, it's silent everywhere. Sometimes black clouds sail above us calmly in a doubt to burst out or not. In the evenings one can appreciate this newly felt fresh air due to the low levels of pollution. As this is the scenario all across the globe it makes one feel as though nature has been planning this for a long time?  Whatever it maybe I believe it is time for us to learn and be kind to Nature.

 A grape leaf on the plate looks adorable alongside the Rose Apples and a leaf stem. Black is an unusual colour palette to be used during Summertime, but I have used it for contrast. Red & White are Summer colours and incorporating a tiny shoot with Red fruits looked winsome.
