Cold soups are refreshing during this season and also easy to hurl the ingredients in a blender for a quick make. They are sweet, savory, creamy or clear...some have it in the beginning of a meal and some end the course with it. Purees of vegetables and fruits along with creams, stocks, butter milk or curd some time light tea are used to prepare a cold soup.Tropical fruits like Banana, Guava, Pineapple, Mangoes, Melons are pureed and prepared with whipped light cream also by spicing it with lemon or lime juice and garnishing with mint, fresh cut fruit chunks. For better taste & texture letting cold soups chill over night or at least four to six hours in the refrigerator is best. A chilled bowl of cold soup on a harried, humid day is just cracking for anyone.

Ripe mangoes - 2 medium sized peeled and cut into cubes.
Sugar - 1/4 cup or as desired
Lemon zest - According to the taste
Lemon juice - 1/4 cup
Place mango, sugar, lemon juice and lemon zest into a blender. Process until smooth and creamy. Serve when chilled. Garnish it with fruit chunks and with dash of fresh cream.
